There is nothing like the scent of fresh basil; it wafts through the air, reminding us of summer gardens and tomato salads. But, as these basil recipes prove, the herb has a lot more to offer than perfuming tomato dishes. We love basil in zesty salsas with grilled chicken or fish, as a key aromatic note in gingery stir-fries, and in Mediterranean vegetable dishes. It is one of the prettiest herbs in fragrance and looks, and it lifts other ingredients with its lovely flavor. Pair basil as a savory or sweet note with fruits—yes, tomatoes—as well as stone fruits and melons. You may be surprised to see it in dessert recipes but do give it a try; basil plays nicely with lemon and strawberries, too.

Basil leaves bruise very easily, so treat them with care. It's best to slice them with a very sharp knife or tear them with your fingers. Do this at the last minute before using; if you leave them exposed to the air after you slice or chop them, the leaves will turn black and lose much of their flavor. Likewise, chopping repeatedly or with a dull knife will blacken the leaves.
