A watermelon-feta salad is one of the most refreshing, salty-sweet combinations we know. Ours is quick to prep and doesn’t need any time to marinate—simply assemble, serve, and enjoy. It’s a reviving dish for a hot day and a lovely pairing with grilled fish or chicken for dinner. Use this recipe as a guideline, adding more watermelon or feta as you like. You can even double it to serve a crowd. Don’t skip the fresh herbs—parsley, mint, or basil are all excellent in this salad, and each brings a different bright contrast.

Ingredients

¼ a small (6-pound) seedless watermelon, rind removed, flesh cut into ¼-inch slices

1 large orange, peel and pith removed, flesh cut into segments

¼ small red onion, thinly sliced

2 ounces feta cheese, thinly sliced

¼ cup fresh parsley leaves

4 teaspoons extra-virgin olive oil

Coarse salt and ground pepper
Directions

Arrange fruits, onion and cheese:
On a serving platter, arrange watermelon, orange, red onion, feta cheese, and parsley.
