Ingredients ¾ bunch fresh spinach, washed, not dried Juice of 1 lemon, plus more for garnish Directions Place the spinach in a microwave-safe container. Cook in a microwave, set on high for 1 to 2 minutes. Pour off any excess liquid. Squeeze with lemon juice, and serve garnished with lemon wedges.
