These easy veggie burgers are made with cooked millet and grated carrot and zucchini. They're fabulous in a bun with all the fixings.

It may not be as common as quinoa or barley, but millet deserves your attention. It's simple to cook and versatile—as these tasty millet burgers prove. Millet is the seed of a cereal grain, and is high in fiber and packed with plant-based proteins, antioxidants, and B vitamins, among other healthy nutrients.

These millet burgers come together quickly because they start with cooked millet. We suggest you cook a big batch of millet and use it for grain salads, side dishes, and these burgers. Grated carrot and zucchini and plenty of chopped parsley give color and moisture to the easy patties, and they cook on the stovetop in less than 10 minutes.

Then, you need to choose how to serve them. Our picks include whole wheat burger buns and the usual fixings of lettuce and tomato, with a smear of Greek yogurt rather than ketchup or mustard.

Ingredients

For the burger

  • 1 ½ cups cooked millet, room temperature

  • 1 tablespoon finely minced shallot

  • 1 clove minced garlic

  • ½ cup peeled and finely grated carrot, loosely packed

  • ¼ cup finely grated zucchini

  • 1 tablespoon chopped parsley

  • 1 teaspoon chopped thyme

  • 1 tablespoon extra-virgin olive oil

  • 1 large egg, lightly whisked

  • 1 ½ teaspoons coarse salt

  • ¼ teaspoon ground pepper

  • 2 tablespoons canola oil, plus more for cooking

For serving

  • 4 whole-grain hamburger buns, toasted

  • Green leaf lettuce

  • Tomato slices

  • ½ cup Greek yogurt

Directions

  1. Mix millet, vegetables, herbs, and oil:

    In a large bowl, combine millet, shallot, garlic, carrot, zucchini, parsley, thyme, and olive oil and mix well.

  2. Add egg; season:

    Add egg and mix until fully incorporated; season with salt and pepper.

  3. Scoop mixture and form burgers:

    Using a 1/2 cup dry measuring cup, scoop out millet mixture and lightly pack. Turn out onto work surface and flatten to make a burger. Repeat process making three more burgers.

  4. Cook burgers:

    Heat a large skillet over medium-high heat. Add canola oil. When the oil is heated, add burgers, working in batches if necessary. Cook, gently turning once, until a golden crust has formed on the bottom, 8 to 10 minutes per side.

    Alternatively, burgers may be baked in a 375°F oven on a baking sheet for 30 minutes.

  5. Serve:

    Serve millet burgers on hamburger buns with lettuce and tomato and a dollop of yogurt.
