Frozen shrimp is an ingredient we always have on hand. Because of their size, they defrost and cook quickly, and can even be cooked from frozen. They are also versatile—they pair with all kinds of spices, sauces, and other ingredients. Also, unless you live on the coast, most shrimp sold fresh have previously been frozen, so we think starting with frozen shrimp makes sense.
